Quick Tomato Sauce Recipe

Channel Inner Italian With Easy Sauce For Everything

Nov 22, 2009 Bethany Fehlinger

Many people might think, "I can't make tomato sauce; the Italians do it best!" Well, thank you! Sauce may be a natural for Italians, but it can be made by anyone!

Put a new spin on it, one that families will love.

Ingredients are wide and varied, and experimentation is key. But if when someone needs a quick fix with the leftover noodles or the kids are screaming for dinner, it doesn't take much time to whip this up.

Quick Tomato Sauce Recipe

Ingredients:

  • 28 oz can of diced tomatoes (Bigger family? Bigger can, or multiple cans!)
  • Oil
  • Small onion
  • A few garlic cloves or garlic powder
  • 1/4 to 1/2 teaspoon of dried basil, oregano, parsley (or the pre-made italian mix of spices)
  • salt to taste (1/4 teaspoon)
  • pepper to taste (1/8 to 1/4 teaspoon)
  • nutritional yeast

Recipe:

  1. Start off with a large pot. Make sure it's deep.
  2. Add extra virgin olive oil, chop up onion and saute until translucent, about 5 to 7 minutes. (In a bind, just add onion powder later when you add the tomatoes, but please still add oil!)
  3. Add garlic about 5 to 6 minutes into the onions, or use garlic powder later
  4. Now, open up those cans and pour! Add garlic and onion powders if using them now.
  5. This next process is very "based on your own cooking time." Half-cover (tip the lid) of the pot and let tomatoes, in their juices, come to a boil. Stir off and on, for about 10 minutes.
  6. It is probably not done at this point but do a taste test. Then, add all your other spices, basil, oregano, parsley, pepper and salt. Cook for another 5 minutes, stirring.
  7. At this point, it should be getting thick, chunky and looking like sauce. If it's still a bit watery, add nutritional yeast. Add it then anyway, because it gives a bit of a cheesy, nutty flavor with tons of vitamins and minerals! It also helps to thicken things up!
  8. Cook for about 5 more minutes and taste test to make sure.

The great thing is, the cook can let sauce cook for about 30 or so minutes if time is needed on other dishes. Just keep a close eye and if the sauce starts to stick to the bottom of the pot, remove from heat, immediately!

A Word About Tomato Paste

Tomato paste helps to make a more thicker sauce quicker, especially if the cook is using more than one big can of tomatoes to make the sauce. However, it takes longer to cook! The sauce must absolutely be done before serving. It might take an extra 10 or so minutes if only used one or two big cans of tomatoes, longer if there is more sauce to be made! Use about half of a 1/4 cup for a small batch, but add about a full 1/4 cup if you have a large batch!

Extra ingredients: When there is only 5 minutes left, vegan meats can be added. If using real meat, please, please cook ahead of time and add when there are 10 minutes left. Make sure the sauce is heated thoroughly if using extra ingredients, and cook longer if using real meat.

Add peas or other frozen veggies 5 minutes before.

If adding cheese, wait until the last second because the cheese will stick! Vegan cheese melts slower, so it's OK to add when a minute or 2 are left.

Buon appetito!
